Ingredients

  • 2 kg boneless skinless chicken thigh
  • 3/4 cup honey
  • 1/2 cup soy sauce
  • 15 cloves of garlic crushed
  • 2 tbsp sweet paprika
  • 1 tbsp sriracha sauce add to your taste
  • 2 tbsp canola oil
  • 1 - 2 cups water add as needed

Instructions

  1. Heat the oven to 180C/356F.

When deboning the chicken thigh many of the butchers miss some parts of bone or cartilage.My recommendation to you is to go over each piece of the chicken thigh with your fingers and feel if there is any small pieces of bone or cartilage leftover. If you find any simply remove them with a knife.This will ensure you have a clean piece of chicken thigh and you are ready to go.

  3. In a baking tray place the chicken thigh, honey, soy sauce, garlic, sweet paprika, sriracha sauce, canola oil and one cup of water. mix well. 

    Taste and fix seasoning if necessary. if not salted enough add some more soy sauce. 

  4. Arrange the chicken thigh in the baking tray and straighten the ones that got folded.

  5. Bake the spicy honey garlic chicken thighs in the oven for 40 minutes.during that time turn the chicken thigh over at least 3 - 4 times.

    Each time you turn the chicken thighs use a spoon and baste them with the sauce from the baking tray.

    The sauce has sugar in it from the honey. in the baking process, the water vaporizes from the sauce the sugar gets caramelized and the sauce thickens.  

    We want the sauce to reach its maximum thickness at the same time that the chicken. This way, they will get the best coating.

    If too much water vaporizes out of the sauce the sugar in it might get burned.

    The first sign that the sauce is reducing too much will be the appearance of sticky dark bubbles at the edges fo the baking tray. if these bubbles start to appear don't worry just add another 1/4 cup of water and mix the sauce well. the water will dilute the sauce and stop it from burning. don't forget to go over the side of the baking tray with a spatula to melt the sauce that got stuck to it.

  6. After 35 minutes in the oven check the spicy honey garlic chicken thighs to see if its ready. I always check things I bake a few minutes before the time that is mentioned in the recipe because of the differences in the ovens. you can always add baking time, but when a dish gets dried there is no turning back.  

    The easiest way to see if the spicy honey garlic chicken thighs are ready is simply cut a small piece and taste it. if the meat is white and juicy it is done. if it's a little pink you should let it cook for an additional 2 -3 minutes and check again. 

    Another nice technique is the pressing technique. press your finger on the thick part of the thigh. then press the tip of your nose. if the pressure feels the same the thighs are ready. 

    When the spicy honey garlic chicken thighs are ready give them a nice baste with the sauce before removing them from the oven. let them cool for 2 minutes so the sauce will cool and stick to the thighs.
