In the process of cooking, the fat in the skin dissolves and makes the skin crispy. The secret for a successful grilled chicken is adding some more oil to the cooking process allowing the skin to get even crispier.
Chefs secret – Grill seasoning
Except for the grilling technique, the main secret of the recipe lies in the seasoning.
Grill seasoning is a complex mixture of spices. The number of different grilling mixtures is probably equal to or larger than the number of spice stores.
Each spice store has its own mixture or mixtures. Each one of them will probably be a recipe that runs in the family for generations. It is a well-kept secret in the spices industry.
Let me tell you the secret. The basic grilling mixture will usually contain paprika, chili, garlic powder, onion powder, salt, and pepper.
About the cooking time
The cooking time of the chicken may vary between 50 – 70 minutes. The difference lies in the fact that not all ovens are the same. Add to that the fact that the chicken size may also vary, which can create a difference in the recipe times.
Cooked chicken should be juicy, and the meat should separate from the bone easily.
This is why I recommend that around 50 minutes of cooking check to see on one of the drumsticks to see if the meat falls off the bone. If it does, the chicken is ready. If not, let it bake for more time.

Ingredients
- 6 Chicken thighs – drumstick separated from thigh
- 100 gram Grill seasoning
- ½ cup Oil
Instructions

Preheat an oven to 180C/356F.

Place the oil and the grill seasoning in a bowl. Mix well.

Using a brush to coat the chicken thighs with the oil and grill seasoning mixture.

Turn the chicken over and coat the other side with the seasoning mixture.

Transfer the coated chicken thighs to a baking pan. And transfer the baking pan into the preheated oven.

After 25 – 30 minutes of cooking, turn the chicken over and continue baking.

After 45 – 50 minutes, turn the chicken over and continue baking.

Around 70 minutes, the chicken is ready.
Bare in mind that the cooking time may vary due to diffrences between ovens and the size of the chicken.

A great way to know if your chicken is ready is to pull the small piece of meat from the side of the drumstick. If the piece is easily pulled out, then the chicken is ready.
