Homemade Chicken Thigh Shawarma in a Skillet
Some nights nothing beats a plate of hot shawarma piled with sweet caramelized onions and a generous drizzle of tahini. You don’t need a vertical rotisserie or a trip to your favorite Middle Eastern spot to get it, either. This skillet version comes together in under an hour, uses one pan, and turns out juicy, fragrant and every bit as satisfying.
In my house this is one of those recipes that keeps coming back. Everyone builds their own plate the way they like it, and there’s rarely anything left over.
Why chicken thighs?
Traditional shawarma stands in Israel usually use turkey thigh, which can be hard to find. Boneless, skinless chicken thighs are the perfect stand-in: they’re sold almost everywhere, and they have just enough fat to stay juicy in a hot pan. Chicken breast works too, but it dries out much faster.
The spice blend is everything
What turns strips of chicken into real shawarma is the seasoning. A classic blend is built on cumin, ground coriander, turmeric (for that signature yellow color), paprika and allspice. Cardamom, cinnamon, a pinch of cloves and nutmeg add warmth and depth. You can mix your own and adjust it to taste, or use a good store-bought shawarma seasoning. If you buy one, check the label and pick a blend without sugar, starch or MSG.
The secret is in the onions
The onions aren’t just a garnish – they give the dish its sweetness and depth. Slice them about 1/8 inch (3-4 mm) thick and cook them low and slow over medium heat until golden and caramelized. It’s the step that’s most tempting to rush, and it’s exactly the step that makes the difference.
A street-food trick: lamb fat
When I want that authentic shawarma-stand flavor, I add a few thin strips of lamb fat to the pan along with the garlic. It melts into the dish and gives it a rich, deep aroma. Ask your butcher for it – and if you can’t find it, simply leave it out.
Don’t let it stew
Chicken thighs tend to release liquid when they hit the pan. If you leave it there, the chicken simmers instead of searing. As soon as liquid collects, drain it, add a little more oil, and keep tossing over high heat. Six to seven minutes is all the chicken needs – any longer and it starts to dry out.
How to serve it
I love it on a plate with plenty of tahini, a chopped cucumber-tomato salad and pickles. It’s also great stuffed into pita or wrapped in flatbread. Leftovers keep well in the fridge for 2-3 days and reheat beautifully in a skillet.
Step by step

Slice the onions into strips – not too thick, not too thin.

Heat the olive oil in a wide skillet over medium heat.

Cook the onions patiently until golden and caramelized.

Turn up the heat and add the garlic (and the lamb fat, if using).

Add the chicken strips and toss over high heat.

Season with shawarma spice, salt and pepper, and stir well.

Your shawarma is ready – serve it hot with tahini!
Homemade Chicken Thigh Shawarma

Ingredients
- 2 1/2 lb boneless, skinless chicken thighs 1.2 kg
- 2 onions about 8 oz (220 g); add more if you like it sweeter
- 3-4 tbsp olive oil
- 2 garlic cloves minced
- 2-3 tbsp shawarma spice blend
- salt and black pepper to taste
- 1 1/2 oz lamb fat 40 g, cut into thin strips, optional
- tahini sauce for serving
Instructions

Trim the chicken thighs of any bits of bone or cartilage and cut them into strips.

Halve the onions and slice them into strips about 1/8 inch (3-4 mm) thick.

Heat the olive oil in a wide skillet over medium heat.

Add the onions and cook patiently, stirring occasionally, until golden and caramelized.

Raise the heat, add the garlic and cook for about a minute, until fragrant. If using lamb fat, add it now.

Add the chicken strips and toss over high heat. If liquid collects in the pan, drain it and add a little more oil so the chicken sears instead of stewing. Keep tossing for 6-7 minutes, just until the chicken is cooked through - no longer, so it stays juicy.

Add the shawarma spice, salt and pepper and stir well. Taste, adjust the seasoning and cook for one more minute.

Transfer to a serving dish and serve hot with tahini.
