If you don’t have overripe bananas, don’t worry, you can always use ripe bananas for the recipe, even though overripe bananas are sweeter and fit the recipe better.

The recipe for banana cake with chocolate chips and marshmallows can handle almost every overripe banana there is.

The truth is that the more the bananas are ripper, the better it is for the cake.

If the banana peel is black – that’s ok. If the banana is mushy – that’s ok. If the fruit itself is all brown and soft – that’s ok.

So when do we throw the bananas?

When the banana has molded over it – throw it away.
If the banana burst open, you must check it to see if insects or flies haven’t visited it – if you see signs of insects or flies, throw it away.

To stop the chocolate chips from sinking to the bottom of the cake, dust them with flour before putting them into the cake mix.

Ingredients

  • 4 overripe bananas
  • 2 cups self-rising flour
  • 1.5 cups sugar
  • 100 gram unsalted butter
  • 2 eggs
  • 1/2 cup chocolate chips
  • 1/4 cup milk
  • 1 pinch salt
  • 1 some flour for dusting
  • 6 – 8 marshmallows cut to small pieces

Instructions

  1. Preheat the oven to 180C/356F.

  2. Melt the butter in a small pot or in the microwave. transfer the butter into a large bowl. 

  3. Add the sugar and eggs to the bowl and stir well.

  4. Peel the bananas and mash them with a fork.

  5. Add the flour, salt, milk, and bananas to the bowl and mix well.

  6. Dust the chocolate chips and add them to the cake mix. 

    The dusting will prevent the chocolate chips from sinking to the bottom of the cake.

  7. Dust the marshmallow and knife with some flour, cut the marshmallows into small pieces, and add them to the cake mix.  

  8. Oil English cake baking tray. Pour the cake mix into the tray and bake in the oven for 45 – 50 minutes. Use a cake tester or a skewer to check if the cake is ready. Stick it in the center of the cake. If it comes out clean or with moist crumbs, the cake is ready. If it comes out with some wet batter, give the cake a few more minutes in the oven and check again. 

  9. Let the cake cool down before trying to cut it. If the cake is not cold, it might fall apart when trying to cut it.
