Who said that tasty food has to be fattening?

This recipe for crispy roasted cauliflower was developed when I was going to a weight loss support group.
I’ve lost 15 kg and developed this amazing recipe. What a win!

The recipe was built according to the weight watchers system, but due to copyright issues, I can’t publish the points of the recipe, but I want to assure you that the recipe stands in the strict guidelines of the system as long as you keep sticking to the recipe and the portions.

If you want to make this recipe skinnier by cutting the “fattening” ingredients even more, but be aware that the taste might change.

DON'T GO AWAY - THE RECIPE IS TASTY AS HELL!

If you read the long intro and felt like pressing the back arrow on your browser – wait. even though the roasted cauliflower recipe is a low-calorie recipe, it is still tasty as hell.

If you like, you can make some minor adjustments in the ingredients and make it a regular recipe or even a decadent recipe oozing with calories.

Changes to the basic recipe

You can change the recipe’s sauce to create a different and new flavor. 

You can easily change it by using different spices and herbs.

You can add some cheese and other ingredients to your taste. All you need to do is try.

Ingredients

  • 1 large cauliflower
  • 3 tbsp Hellmann's light mayonnaise
  • 3 tbsp breadcrumbs
  • 5 cloves of garlic crushed
  • 1/2 tsp turmeric
  • 1/2 tsp ground black pepper
  • 2 tbsp kosher salt
  • 3-4 tbsp water

Instructions

  1. Heat the oven to 250C/482F.

    Fill a large pot with water. add In the salt and bring to boil.

  2. Use a knife and cut the cauliflower flowers away from the stem.

  3. If you have large flowers you can cut them into smaller pieces with a knife or break them with your hand.

  4. Place the flowers of the cauliflower in the boiling water and cook them for 10 minutes.

  5. In a bowl mix the mayonnaise, garlic, turmeric, black pepper and 3 spoons of water to create a sauce.

  6. After 10 minutes check the cauliflower to see if it got soft.

    The best way to check is by stabbing the cauliflower with a fork. we want the fork to penetrate the cauliflower with some resistance.  the cauliflower will finish cooking in the oven. 

    If the cauliflower is ready, strain the water from the pot. if not let it cook for an additional 1 - 2 minutes and recheck again.

    After draining the water from the pot let the cauliflower to stand for 3 minutes in the pot and let it steam out the some of the water it has absorbed in the cooking process. 

    Taste a piece of the cauliflower to see if it is salty enough. if not add some salt to the sauce.

  7. Place a baking paper at the base of a baking tray. spray the baking paper with the cooking spray and place the cauliflower on it.

  8. Use a brush and brush the sauce on the cauliflower.

  9. Turn the cauliflower to the other side and brush it with the sauce.

  10. Sprinkle the cauliflower with the breadcrumbs. put in the oven and bake for 10 minutes.

  11. After 10 minutes of baking, change the oven mode into an upper grill.

    Give the breadcrumbs a short spray of the cooking spray. this will add extra crisp to the breadcrumbs. if you want to shave few calories off the recipe you can skip the spraying.

  12. Grill the cauliflower for additional 10 minutes until dark burnt edges start to appear on the breadcrumbs that are on the cauliflower.

    The breadcrumbs that are around the cauliflower might get burnt at this point and its ok. you only need to worry about the breadcrumbs that are on the cauliflower.

    Remove from the oven and enjoy.

  13. Some changes and variation ideas:

    The mayonnaise is a great receptor base for taste. if you're not counting calories: replace the light mayonnaise with a regular mayonnaise and use the original recipe. 

    Variation ideas:

     instead of the turmeric use other things:

    Spices: curry, smoked paprika, baharat, ras el hanout.

    Fresh herbs: Garlic, Dill, Oregano. Thyme.

    Add sauces to the mayonnaise: sweet chili sauce, honey & mustard etc.

    For a decadent version, add grated cheeses to the breadcrumb topping like parmesan, mozzarella, pecorino.
